Slow Cooker Chicken Casablanca

Ingredients:

2 tbsp cooking oil
2 large onions, sliced
1 tsp ground ginger
3 garlic cloves, minced
3 large carrots, diced
2 large potatoes, diced
3 lbs. boneless skinless chicken
1/2 tsp. ground cumin
1 tsp. salt
1/2 tsp black pepper
1/4 tsp. ground cinnamon
2 tbsp. raisins
1 (14 1/2 oz.) can diced tomatoes
3 small zucchini, sliced
1 (15 oz.) can garbanzo beans, drained
2 tbsp. chopped parsley

Directions:

1. Saute onions, ginger and garlic in oil in skillet. (Reserve oil). Transfer to slow cooker.
Add carrots and potatoes.
2. Brown chicken over medium heat in reserved oil. Transfer to slow cooker.
Mix in gently with vegetables.
3. Combine spices in seperate bowl. Sprinkle over chicken and vegetables.
Add raisins and tomatoes.
4. Cover and cook on High 4 to 6 hours.
5. Add sliced zucchini, beans and parsley 30 minutes before serving.

Yield: 6 to 8 servings
